I think it is pretty clear how much we enjoy adding coffee to everything we do here at BeanGiving. We recently discovered this amazing recipe for a coconut coffee smoothie, its creamy and delicious and gives you a great boost that can only come from coffee. We think this smoothie works at all times of the day, from a quick energy boosting breakfast to a pick me up beverage for the afternoon.
Just remember for this recipe to prepare the coffee and freeze it in an ice-cube tray the night before, to create perfect coffee ice blocks and the perfect smoothie every time!
- 1 ½ cups of black coffee (BeanGiving Espresso Blend)
- 1 ripe banana
- ½ cup of coconut milk (or a milk of your choice)
- 2 tablespoons of shredded coconut
- 1 tablespoon of honey
- 1 teaspoon of cinnamon
Prepare the coffee and pour it into an ice cube tray and freeze overnight. Place all the ingredients and 1 cup of the frozen coffee ice cubes into a blender. Process until smooth, if necessary add more milk to reach the desired consistency. Test for sweetness and add more honey if necessary. Finally… Enjoy!
