Nicaraguan coffees have the benefit of being grown in mountainous regions with access to volcanic soil & unique weather conditions.
The El Peñónfrom the La BastillaEstate is a naturally processed coffee, meaning that it is hand-picked & sundried to ferment the flavours within the coffee cherry over roughly 14 days.
This processing method is renowned for making rich, sweet coffees, and given that the fermentation happens within the cherry, you can really identify the flavour compounds from the fruit pushing through the beans themselves.
